Separated into four neighbourhoods, each named after Greek island complexes and inspired by the light and colours of Santorini itself, the suites and villas are designed with both style and sustainability in mind. Each of the 65 Suites and Villas comes with its own kitchenette, living area, plush beds and personal verandas complete with heated jacuzzi and sun loungers.
The award-winning Greek breakfast is an impressive spread, with all the usual suspects and much, much more besides served at a specially designed area overlooking the pool and the sea. Elsewhere, the Akratos Poolside Bar provides freshly prepared snacks inspired by the Mediterranean, with delicious cocktails and drinks made from Greek signature ingredients and served at the main infinity pool throughout the day.
The best option for dinner is no doubt the intimate, candle-lit Alios Ilios Restaurant. Dining here feels rather like eating out on a private terrace – there are just a handful of tables even though the sea views stretch out for miles. Dishes are derived from Greek Anatolian roots and are prettily plated, with the seafood being the highlight. Enjoy it all served to stunning sunset views over the Aegean Sea.
Headlining the facilities is the Anassa Spa, awarded the 'Best Resort Spa in Europe' on two occasions. Expect a wide range of rejuvenating treatments and massages as well as an indoor pool, steam bath, cryotherapy and sauna. A complimentary, fully equipped fitness centre is also available to use at leisure. Outside, two freshwater infinity swimming pools showcase more of those dazzling sea views, plus there are another three freshwater pools spread around the Santo Maris Oia's 'neighbourhoods'.
