Remote and utterly unspoilt, Tasmania is a land of rugged mountains, shimmering lakes and old-growth forests. It’s the spectacular juxtaposition to its most luxurious accommodation – Saffire Freycinet. Designed by the award-winning firm Circa Architecture, its sweeping aluminium lines and great sheets of glass are a tour-de-force of modernist expression. It’s all found in a natural setting, thousands of years in the making. Indeed, suites and facilities alike command irresistible views back over the wild bushland and out onto its coastal setting. Here, the Hazards Mountains look out over the Great Oyster Bay in a meeting of golden sands and azure waters.

Inside, the commitment to cutting-edge design is perhaps most apparent in the guest rooms. Limited to just 20 suites, locally made timber furniture and Egyptian cotton sheets are complemented by floor-to-ceiling views over the bush and onto the surrounding waters. Many also feature deck loungers and bathrooms with a view while the Private Pavilions mix in plunge pools, champagne and a kitchen for your private chef. 

Speaking of which, the all-inclusive dining is a particular highlight. Given that Tasmania is renown for its foodie heritage, locally sourced produce that ranges from fine cuts of beef to crayfish and scallops makes for exciting menus. And, as part of the range of activities on offer, you can even visit the local cold-climate vineyards and oyster farm. Here you can wade out onto the beds themselves to shuck oysters and drink sparkling wine from a seemingly floating table. Further inclusions extend to canoeing, guided walks and biking while spa treatments offer a more relaxed alternative.
